Turkey Florentine

Description:This delicious Turkey Florentine is assembled in layers in an oven dish, combining spinach, shallots, turkey, and a creamy cheese sauce for a delightful and hearty meal.

Ingredients:

First Layer:

  • 200 grams spinach

  • Grated nutmeg

Preparation:

  1. Cook the spinach in a saucepan with a teaspoon of water for 3 minutes.

  2. Finely chop the spinach with scissors and press it in a sieve to remove all liquid.

  3. Place the spinach in the oven dish and sprinkle with freshly grated nutmeg.

Second Layer:

  • 3 shallots, peeled and finely sliced

  • 1 tablespoon olive oil

Preparation:

  1. Fry the shallots in olive oil until brown.

  2. Layer the fried shallots over the spinach.

Third Layer:

  • 300 grams turkey, cut into strips

Preparation:

  1. Fry the turkey in the oil left over from the shallots until golden all over.

  2. Spread the turkey strips over the shallots.

Fourth Layer – Cheese Sauce:

  • ½ tablespoon butter

  • ½ tablespoon plain flour

  • 80 milliliters semi-skimmed milk

  • 60 milliliters white wine or cider

  • 150 grams grated cheese (Emmental or mozzarella)

  • 1 teaspoon chili powder

Preparation:

  1. In a small saucepan, melt the butter and work in the flour.

  2. Gradually add the milk and wine, stirring to make a sauce. Cook for 2 minutes.

  3. Add the grated cheese and chili powder, and mix until the cheese is melted and the sauce is smooth.

  4. Pour the cheese sauce over the turkey in the oven dish.

Finishing:

  • 2 tablespoons golden breadcrumbs

  • 1 tablespoon grated Parmesan cheese

Preparation:

  1. Cover the dish with breadcrumbs and Parmesan.

  2. Bake for 15 minutes at 180°C.
