Watermelon & goat's cheese

Watermelon and goat’s cheese

2 person starter – 15 minutes

 

Ingredients:

Watermelon (1/2 of a medium fruit, 1/4 of a large one)

75 grams fresh goat’s cheese

A dribble of olive oil

Freshly-ground pepper

1 tablespoon chopped basil

 

Preparation:

Cut half the watermelon into small dice.

Put the other half in the bowl of the hand-mixer.

Add pepper and the dribble of oil.

Mix to obtain a homogenous liquid.

Tip the liquid into two dishes or glasses. Add the cubes of melon.

Add the cubes of goat’s cheese. Decorate with basil.
