Spiced sweet potato and peas


Spiced sweet potato and peas

2 person starter (or accompaniment for a meat dish) – 20 minutes

Ingredients:

200 g sweet potato, peeled and cut into small dice.

1 tablespoon olive oil

1 small onion or shallot, peeled and chopped finely

½ tablespoon cider vinegar

50 g peas

For the sauce:

2 tablespoons olive oil

2 tablespoons cider vinegar

1/2 teaspoon chili powder

1/2 teaspoon all spice

1 teaspoon ground coriander

Preparation:

In a saucepan cook the sweet potato in the oil for 5 minutes on low heat.     

Turn up the heat and cook for another 5 minutes.

Add the onion and the vinegar. Continue cooking until the onion is brown.

During this time mix together in a bowl the ingredients for the sauce.

Add the peas and the sauce to the saucepan.

Cook for 2 minutes and then serve.
