Spiced pineapple and gingerbread

2 person dessert – 15 minutes.

 

Ingredients:

Half a pineapple, peeled, cored and chopped into pieces.

2 thick slices of gingerbread cut into dice

For the orange and cinnamon butter:

The zest of half an orange

35 grams butter

A pinch of ground cinnamon

1 ½ tablespoons liquid honey

75 millilitres of orange juice

Put the zest, butter, cinnamon and honey in a bowl.

Heat for 40 seconds at 800 W in the microwave.

Add the orange juice and whip the mixture.

Keep boiling for 2 minutes. Remove from the heat.

Distribute the gingerbread between two ovenware bowls.

Cover with the pineapple pieces.

Add the orange and cinnamon butter.

Bake for 10 minutes at 220 °C and serve with ice cream.
