Smoked Mackerel salad


Smoked mackerel and sweet pepper salad

2 persons – 20 minutes

 

Ingredients:

200 grams smoked mackerel, skinned and pulled into pieces

½ a red sweet pepper, deseeded and chopped

100 grams cooked potatoes, cut into dice.

A handful of lettuce leaves

1 tablespoon olive oil

1 tablespoon freshly-squeezed lime juice

Freshly ground mixed peppercorns

 

Preparation:

Stir the oil and vinegar together to create a vinaigrette.

If the smoked mackerel is not already peppered, stir fresh pepper into the vinaigrette.

Add the potatoes, sweet peppers and fish.

Serve on a bed of lettuce.
