Red cabbage

Red cabbage

2 person accompaniment – 20 minutes

A superb accompaniment for meat in the autumn

 

For the cabbage:

¼ red cabbage, cut into fine slices and separated

2 tablespoon cold water

1 tablespoon butter

Put all these into an ovenproof dish.

Cook in the microwave at 800 W for 10 minutes

 

For the sultanas:

1 1/2 tablespoons freshly-squeezed orange juice

1 tablespoon golden sultanas

Put these in a bowl and leave for 10 minutes

 

For the finish:

1 tablespoon cider vinegar

2 tablespoons olive oil

1 sharp-flavoured apple (Reinette) washed, peeled, cored and grated

1 small carrot, peeled and grated

1 teaspoon freshly-grated nutmeg

1 teaspoon ground cinnamon

1 teaspoon ground cloves

1 tablespoon soft brown sugar

½ bunch parsley, finely chopped

Preparation:

Tip the vinegar and oil into a large saucepan.

Add the sultanas and their juice

Add half the cabbage.

Add the apple, the carrot and then the rest of the cabbage.

Add the spices and sugar. Cook on medium heat for 20 minutes.

Add the parsley, stir well and serve.
