Prawn avocado & grapefruit salad
2 person main course – 40 minutes
Ingredients for the dressing:
1 1/2 tablespoon olive oil
1 tablespoon cider vinegar
½ teaspoon French mustard (moutarde de Dijon)
A pinch of curry powder
Stir the oil and vinegar until the mix emulsifies.
Stir in the flavourings.
Ingredients for the salad:
Salad leaves
1 pink grapefruit peeled, segmented and skin removed.
200 grams cooked prawns
1 avocado, peeled, stoned and diced
The juice of 1 lemon
Immerse the avocado in the lemon juice and stir well.
Add the prawns and grapefruit. Mix gently.
Serve on salad leaves with the dressing sprinkled over.
