Pork colombo
2 persons – 50 minutes
[Colombo powder originated in the Antilles. It is a sweet gentle spice mix of turmeric, fenugreek, cumin, mustard, white pepper, parsley and cloves; it can be made at home]
This recipe also works with chicken and turkey, and the vegetables can vary.
Ingredients for the pork:
250 grams lean pork cut in cubes
Ingredients for the marinade:
1 tablespoon olive oil
1 tablespoon cider vinegar
2 cloves garlic, peeled and crushed
½ onion, peeled and finely chopped
2 teaspoons colombo powder
Vegetables included:
2 spring onions, chopped
3 sprigs of parsley, chopped
2 cloves
½ onion, peeled and finely chopped
½ christophine (or 4 small potatoes) diced
1 small aubergine, diced or 100 grams mushrooms, chopped
1 green chilli, deseeded and finely chopped
1 sweet pepper, deseeded and diced
the leaves of a sprig of thyme
2 teaspoons colombo powder
To finish:
2 quarters of a lime
Preparation:
Mix the pork into the marinade ingredients and leave for 20 minutes in the fridge.
Then in a covered frying pan fry the pork in oil on all sides, then tip in the marinade.
Add the onion, spring onion, cloves and parsley.
Cook over a medium heat for ten minutes.
Add everything else including more colombo and a little water.
Cover and simmer for 20 minutes.
Serve with lime juice squeezed over
