Lamb steaks with pineapple

2 person main dish – 15 minutes

Ingredients for the lamb:

2 slices of leg of lamb (300 grams)

1 rasher of steaky bacon

1 slice pineapple, finely chopped

1 spring onion finely sliced

1 teaspoon chopped fresh mint

Ingredients for the sauce:

40 millilitres pineapple juice or orange juice

3 drops Worcester sauce

1 teaspoon brown sugar

1 teaspoon cornflour

1 teaspoon water

Preparation:

Cook the bacon in the microwave at 800 W for 90 seconds. Chop finely.

Mix in a bowl the bacon, pineapple, onion and mint.

Fry the lamb on both sides in a little oil to seal the meat.

Cover the lamb with the pineapple mix. Cook gently 6 minutes.

In a microwaveable bowl mix the ingredients for the sauce.

Microwave the sauce at 600 W for 2 minutes..

Serve the pineapple-covered lamb steaks with their sauce and a vegetable such as salicorn or runner beans.
