Lamb asparagus and salicorn


Lamb with salicorn and asparagus

2 person main dish – 30 minutes

Ingredients:

2 lamb chops or slices of leg

25 grams butter

1 tablespoon freshly picked thyme leaves

1 young leek, trimmed and finely sliced

100 grams (5 stalks) asparagus (peeled if white) cut in pieces

200 grams salicorn (or finely sliced runner beans)

1 kiwi fruit, peeled and chopped

2 tablespoons fresh lemon juice

2 tablespoons white wine or cider

Preparation:

Fry the lamb on both sides in the butter to seal the meat.

Remove the lamb and fry the leeks until they are soft.

Add the asparagus and salicorn. Return the lamb to the pan.

Add the kiwi fruit. Scatter thyme over. Add juice and wine.

Cook over middle heat for 10 minutes. Serve.
