Cake with fresh cherries
6 - 8 person dessert – 2 hours
Ingredients:
100 grams softened butter
90 grams castor sugar
2 eggs
168 grams plain flour
2 tablespoons powdered almonds
1 teaspoon (3.7 grams) baking powder
Pinch of salt
350 grams of ripe cherries minus their stones
Preparation:
Stir the butter and sugar together until smooth.
Add the eggs and mix well. Add all the dry ingredients and remix.
Then stir in the cherries until evenly spread throughout.
Butter a cake mould. Fill with the cherry mixture.
Bake in the over for 40 minutes at 160°C.
Then cover the mould with aluminium foil to prevent too much browning.
Continue baking at 160°C for another 40 minutes.
Allow to cool before slicing.
[This can be frozen as individual portions, and will keep for a month]
