Fish fillet in orange sauce
2 persons - main dish – 35 minutes
Ingredients:
2 fillets of fish such as sea-bream, John Dory, plaice
1 teaspoon fresh thyme leaves
1 tablespoon olive oil
Ingredients for the sauce:
1 shallot, peeled and finely chopped
the zest and juice of half an orange
30 millilitres white wine or Breton cider
100 millilitres of fresh cream
65 grams butter
Salt and black pepper
To finish:
Half an orange peeled and cut into segments
Preparation:
Scatter thyme over the filets, the fry them on both sides in the oil.
Pre-heat the oven to 200°C.
Put the fish in an oven dish and bake for 5 minutes.
Cook the shallot, wine, juice and zest in a saucepan until the moisture has evaporated.
Pour in the cream and reheat for 2 minutes.
Incorporate the butter. Salt and pepper to taste.
Serve the filets covered in sauce, surrounded by orange segments, accompanied by a portion of cooked vegetables.
