Fennel, clementines and cheese
2 person starter – 10 minutes
Ingredients:
1 small fennel bulb, cut into dice.
2 clementines (or 1 small orange), peeled and cut into segments
The zest of 1 clementine (or ½ orange)
50 grams hard cheese (traditionally mimolette, which is orange coloured)
1 tablespoon clementine juice
1 tablespoon olive oil
Black pepper
Decorative herbs or salad leaves
Preparation:
Whip the oil and juice together to make a vinaigrette. Add pepper and the zest.
Add the fennel, clementines and cheese. Mix well.
Serve decorated with herbs or salad leaves.
