Eggs Perrette with ham and goat cheese


Eggs Perrette (with ham and goat cheese)

2 person main dish – 80 minutes

 

Ingredients:

2 leeks, washed and cut into rounds

20 grams butter

1 tablespoon cider

2 slices of smoked ham (or unsmoked, or mortadella, or bacon)

200 grams goat’s cheese cut into six pieces

3 eggs, beaten

20 millilitres semi-skimmed milk

2 teaspoons French mustard (preferably the type including mustard grains)

Freshly-grated nutmeg

Salt, pepper

 

Preparation:

Put the butter in an oven dish and heat it 1 minute in the micro-wave.

Add the leeks and the cider. Cover with foil and bake 10 minutes at 200°C.

Lay the ham over the leeks, then add the goat’s cheese.

Beat the eggs with the mustard, nutmeg and milk.

Pour the egg mix into the dish. Bake for 20 minutes at 200°C.
