Duck with kiwi sauce
2 persons - main dish – 30 minutes
Ingredients:
1 duck breast (350 grams) cut into two servings
1 tablespoon butter
3 kiwi fruits, peeled and chopped
Freshly-squeezed juice of 3 limes
1 sweet green pepper, deseeded and diced
2 tablespoons sirop de Violette or Pineau de Charente or Bénédictine
½ teaspoon caster sugar
½ teaspoon French mustard
Salt and pepper
Vegetable risotto to serve
Preparation:
Cook the duck breast skin side down in a frying pan for 7 minutes.
Remove the duck and throw away all the fat.
Return the duck to the pan skin side up and cook in butter for 8 minutes.
Remove the duck. Deglaze the pan with juice and liqueur. Add kiwis.
Boil for 5 minutes until the sauce turns syrupy.
Add sugar and mustard. Season.
Slice the duck and serve covered with kiwi sauce, with an accompanying risotto.
