Chicken Marengo
2 persons - main dish – 30 minutes
(this recipe works with turkey, duck, veal and pork)
Ingredients:
1 tablespoon olive oil
1 large onion (or leek) peeled and sliced
2 cloves garlic, peeled and crushed
140 grams chicken (or other meat) cut into dice
1 sweet green pepper, deseeded and diced
2 tablespoons black olives, de-stoned
100 grams mushrooms, each cut into 4
Half a tin of diced Italian tomatoes
10 cherry tomatoes, halved (or 1 large tomato, sliced)
250 millilitres dry white wine or cider
A handful of finely chopped fresh herbs (thyme, rosemary, oregano)
Preparation:
Fry the onions and garlic in the oil until starting to brown.
Add the meat and seal it on all sides.
Add the rest of the ingredients except the herbs.
Simmer for 20 minutes. Serve covered in herbs.
