Carrot, orange and sultanas


Grated carrot, orange and sultanas

2 person starter – 10 minutes

Ingredients:

1 large carrot, peeled and grated

The zest and juice of half a large orange

The other half of the orange peeled and chopped

1 tablespoon fresh lemon juice

12 sultanas

Olive oil

Coriander or parsley, finely chopped

Preparation:

Mix together the orange juice, lemon juice and orange zest.

Add a drip of oil and the sultanas.

Add the grated carrot, coriander or parsley and chopped orange.

Mix well and leave in the fridge until required.

Serve cold.
