Broad bean and bacon soup
4 persons - 30 minutes
Ingredients:
10 grams butter
100 grams bacon lardons (or 2 slices of ham, chopped)
1 carrot, peeled and diced
1 small leek, finely sliced
1 onion, peeled and finely chopped
1 clove garlic, peeled and crushed
750 millilitres water
2 stock cubes or bouillon concentrates
275 grams broad beans, podded and blanched in water 3 minutes at 800W in a microwave A bouquet garni (bay leaf, thyme, rosemary)
Preparation:
In a large saucepan fry carrot, leek, onion, garlic and bacon in the butter.
When soft, add the water and stock cubes.
Add the broad beans. Bring to the boil, then cook gently 20 minutes on medium heat.
Put in the mixer until smooth.
Serve in bowls with a little fresh cream.
