Blueberry and red fruit jelly
6 person dessert – 20 minutes + overnight
Ingredients for the liquid:
250 grams red fruit (raspberries are best)
450 millilitres water
100 grams castor sugar
Heat the water and sugar until sugar dissolved. Add fruit and warm through.
Put in a mixer (or mash by hand) then put through a sieve to remove seeds.
Ingredients for the jelly:
450 millilitres of the liquid
4 sheets of gelatine
Soak the gelatine in cold water for 3 minutes until soft.
Bring the liquid to the boil, add the gelatine, boil 2 minutes.
To finish:
250 grams blueberries, raspberries and strawberries
If wished, trifle sponges or sweet crunchy biscuits, in pieces
If using sponges or biscuits put them in the bottom of the bowl.
Place the fruit on top. Pour in the warm jelly mixture. Allow to cool.
Place the bowl in the refrigerator for 2 hours or overnight.
[This keeps for at least a week in the refrigerator]
