Beetroot mousse
2 person starter – 10 minutes
Ingredients:
200 grams cooked beetroot (tennis ball size), peeled and chopped
1 ripe kiwi fruit, peeled and chopped
1 tablespoon olive oil
1 tablespoon balsamic vinegar
freshly-ground pepper
2 slices of toast (or biscotte or multi-cereal bread)
Preparation:
Put everything except the toast in the pot of a hand mixer.
Mix until homogenous.
Serve on the slices of toast.
