Beef in mediterranean spice and olives
2 persons - main dish – 45 minutes
Ingredients:
250 grams beef steak cut into cubes
1 teaspoon freshly-grated ginger root
1 teaspoon ground coriander
1 teaspoon ground cumin
1 clove garlic, peeled and crushed
Mix the spices and garlic together.
Add the beef and work the spice into the meat with the fingers.
In a small frying pan brown the beef in the oil.
Lower the heat and cook for 10 minutes.
Ingredients for the sauce:
1 teaspoon ground ginger
1 teaspoon ground coriander
1 teaspoon ground cumin
1 tablespoon Harissa (a Moroccan chili paste)
200 millilitres cider
100 grams green olives thinly sliced
20 grams fresh parsley finely chopped
In a small saucepan mix the spices, Harissa and cider.
Bring to the boil then simmer for 3 minutes uncovered.
Add the olives and parsley. When warmed through add to the beef.
Serve the meat and sauce accompanied by couscous, lentils or rice.
