Beef encrusted with anchovies
2 person main dish – 80 minutes
Ingredients:
250 grams beef fillet steak cut into two servings
1 (125 gram) tin anchovies in olive oil and lemon juice
1 tablespoon French mustard
1 tablespoon chilli powder (piment d’Espelette)
1 tablespoon fresh cream
Preparation:
Mash the anchovies in the liquid from the tin. (If not tinned in olive oil and lemon juice, drain the fish and mash in olive oil and lemon juice)
Work the mustard and chilli into the anchovy paste.
Cover the beef with the paste and leave to marinate for at least 1 hour.
Remove the beef from the marinade. Brown on both sides in the frying pan.
Lower the heat. Add the cream to the marinade and cover the meat with it.
Cook the steaks in the frying pan covered with a lid for 15 minutes.
(Turn the steaks regularly. If the pan dries out add a little cider.)
Serve with accompanying vegetables
