Avocado, prawns and grapefruit
2 person starter – 10 minutes
Ingredients:
1 ripe avocado, peeled and diced
The juice of half a lime
1 teaspoon chilli powder (piment d’Espelette)
The peeled segments of half a pink grapefruit
200 grams prawns, cooked and shelled.
1 tablespoon of olive oil
½ tablespoon soy sauce
The juice of the other half of a lime
Salad leaves
Preparation:
In a large bowl gently stir avocado dice, lime juice and chilli powder.
Add the prawns and grapefruit and stir again.
Make a vinaigrette of the oil and the rest of the lime juice. Stir in the soy.
Place a handful of salad on each plate and cover with the prawn mix.
Drizzle over the vinaigrette.
