Asparagus and cheese clafoutis

2 person starter – 50 minutes

Ingredients:

200 grams green asparagus, cut in 1-inch lengths

2 eggs, beaten together

150 millilitres  fresh cream

150 millilitres semi-skimmed milk

150 g goat’s cheese or cottage cheese, mashed with a fork

4 tablespoons plain flour

4 tablespoons cornflour

1 tablespoon chopped spring onions

Butter and flour for preparing the dish

Preparation:

Cook the asparagus in a little water in the microwave for 3 minutes at 800 W.

In a bowl mix the eggs with the cream and then the milk.

Incorporate the cheese, then the flour and cornflour.

Butter and then flour an oven dish; add the asparagus.

Cover with the cheese mix. Sprinkle with spring onion.

Cook in the over for 30 minutes at 200°C.
