Cucumber Soup

Cucumber soup

4 persons - 30 minutes

(this keeps in the fridge for  4 days)

 

Ingredients:

1 tablespoon olive oil

1 onion, peeled and chopped

1 cucumber (550 grams) peeled thinly and cut into dice

1 floury potato (200 grams) peeled and cur into dice

500 millilitres water

2 vegetable stock cubes

1 teaspoon powdered bayleaf

1 teaspoon powdered cumin

2 sprigs fresh mint finely chopped

Preparation:

In a large saucepan soften the onion in the oil.

Add the cucumber, potato, bay, cumin, cubes and water.

Bring to the boil, then simmer 15 minutes.

Put in the mixer until smooth.

Serve decorated with mint leaves.
