Clementines, cheese and fennel

Clementines, fennel and cheese

2 person starter – 10 minutes

 

Ingredients:

I small bulb of fennel, chopped

2 clementines, peeled  and cut into pieces

50 grams hard cheese (orange-coloured Mimolette is traditional)

The juice of 1 clementine (or 1 tablespoon orange juice)

1 tablespoon olive oil

Freshly-ground pepper

 

Preparation:

Make a vinaigrette by mixing the juice and the oil.

Add pepper to taste.

Add the fennel, clementines and cheese.
