Asparagus & crab clafoutis

Asparagus and crab clafoutis

2 person starter – 50 minutes

 

Ingredients:

2 eggs, beaten together

150 millilitres  fresh cream

150 millilitres semi-skimmed milk

4 tablespoons plain flour

4 tablespoons cornflour

1 tablespoon chopped chives or spring onions or dill (optional)

Butter and flour for preparing the dish

8 stalks green asparagus, cut in 1-inch lengths

50 grams freshly-cooked crab, tinned crab or crab rillettes

 

Preparation:

Cook the asparagus in a little water in the microwave for 3 minutes at 800 W.

In a bowl mix the eggs with the cream and then the milk.

Incorporate the flour and cornflour.

Butter and then flour an oven dish. Add the asparagus and pieces of crab.

Sprinkle with chives. Cook in the oven for 30 minutes at 200°C
